HaPpY TuEsDaY! 

I don't know about you, but the Spring is our busiest season with baseball games 4 nights a week and soccer games on Saturday. It is HARD to find time to cook a meal, especially because all 3 boys tend to be eating dinner at different times around practices and games. 

This recipe is one of my go-to meals! It is quick and easy and you make it earlier in the day. When they are ready to eat, it is in the fridge and everyone can make a plate! 


I forgot to snap a finished pic so this was my plate! Sorry it's not the best photo, but you get the idea! Simple! Simple! Simple!

Here's what you will need:


2 lbs Hamburger meat - cooked and drained (I forgot to put mine in the pic above!)
2 cans Ranch Style Beans
1 package Taco Seasoning (I use the mild so my kids will eat it!)
1 cup Grated cheese (I used Colby Jack & Cheddar)
Catalina Dressing


First, brown your hamburger meat in a skillet over medium high heat. 


Drain your hamburger meat. 


Drain your Ranch Style Beans and spread on the bottom of a 9 x 13 casserole dish. 


Next, add your Hamburger meat on top of the beans.


Sprinkle the taco seasoning over the meat. 


Add your lettuce and chopped tomato.


Top with grated cheese and then add your Catalina dressing. I just kinda swirl it around the top as you can see! 


Put a lid on your casserole dish and place in refrigerator to chill. (Approx 1 hour)

I usually make ours in the morning and then pop in the fridge and it's ready that evening! We usually have leftovers for lunch the next day too! 


We like to crumble a few Fritos over it on our plate to give it a little crunch and add a little salty taste. You could add your favorite tortilla chip too or serve without!

During the Fall and holiday season, one of our favorite things to make is homemade Chex Mix. We snack on it while watching Christmas movies, playing board games and cards, and just for an afternoon snack! My kids LOVE this mix! 



What You'll Need
I large bag Fritos
1 16oz jar dry roasted peanuts
1 bag pretzel sticks (or regular pretzels)
1 box Crispix cereal
1 large box cheddar Cheez Its
6-8 Tablespoons Worcestershire sauce
2 sticks butter
1 teaspoon Celery Salt
1 teaspoon Onion Salt
1 teaspoon Garlic Salt
1 teaspoon Chili Powder
1 large deep roaster pan


Pour all the Fritos, peanuts, pretzel sticks (I use almost the whole bag), Crispix, and Cheez Its in your roaster pan. I pour a little of each at a time and mix together then pour a little more, etc. Just makes it easier to have it mixed up!


Next, melt your sticks of butter. I use the microwave to melt the butter.

Add in the Worcestershire sauce (I use 8 TBSP bc I love the flavor!), Celery salt, Onion salt, Garlic salt, and Chili Powder.


Pour this mixture evenly over your Chex Mex. Again, I pour a little at a time and then stir the mixture. Pour a little more and mix together until you use all of the Worcestershire mixture. 


Bake at 250 degrees for 2-3 hours. Stir every 30 minutes. You are just baking until your Chex Mixture is dry. 


It is SO GOOD!
